Cooking 101: How to use truffle oil, truffle sauce

Rare and highly prized, truffles are akin to glitters or any sparkling addition to something to make it more special. They are famously used in French cuisine and have continually gained popularity among other nations that discovered or learned how to cultivate them.

Valnerina in Italy, for instance produce the ingredients used in Umbria Terra Di Tartufi’s white truffle oil and black truffle sauce.

Truffle oil use and pairings

The brand’s white truffle oil—made with olive oil, dehydrated Bianchetto truffle, and white truffle aroma—features a delicate flavor with a slight garlicky taste and a hint of pepper. It is used almost exclusively as a finishing oil, meaning it is added to a dish near or at the end of preparation, as its potency is heat-sensitive and not suitable as a cooking oil.

Truffle oil and sauce are used to boost flavors of dishes.

It works best mixed in fresh with pasta recipes and risotto. It also goes great with fish and chicken recipes such as chicken wings, fish fillet, salmon, and scallops, and even simple toasted bread. It can also be used to dress salads and soups.

Truffle oil can also boost the flavors of popcorn, French fries, or pizza; or mixed with ketchup, mayonnaise, or hummus.

Black truffle sauce use and pairings

Black truffle sauce, on the other hand, has a more intense and robust flavor, which some may describe as earthy and nutty with chocolate notes. It is heated up and mixed with other ingredients.

Umbria Terra Di Tartufi’s black truffle sauce is made with fresh Champignon mushrooms, extra virgin olive oil, black olives, and the natural flavor of black summer truffle. It comes in two variants, Black Truffle Sauce and the more intense Black Truffle Sauce 5%.

To use the original black truffle sauce, simply heat it up and mix with pasta, meat, fish, potatoes, roasted vegetables, or salad. It is perfect for garnishing appetizers and canapés or for enhancing dishes with a delicate and fine flavor.

The 5% variant is a perfect match for both Western and Eastern cuisines like shrimp or risotto. A little goes a long way, and it’s best not heated too much to preserve its aroma.

Umbria Terra Di Tartufi is distributed in the Philippines by Dygen Food Ventures, Inc. and is available at goodwill.market. The white truffle oil is available in 100ml and 250ml bottles for P719 and P1,399, respectively. The Original Truffle Sauce is available in 80g and 180g bottles for P519 and P759, respectively, while the Black Truffle Sauce 5% is available in 180g bottle for P999.
