Last night’s dinner can be difficult to feed to the family. While they are economical (less food waste) and practical (one less chore to do), eating the same food for two or three days in a row can be a drab.
But it is a problem that can be easily resolved with a bit of creativity.
Makati-based culinary school The Maya Kitchen, shares easy tips and quick recipes to reinvent the most common leftovers at home.
Cooked rice is easily the most common food every Filipino household has, at one time or another, cooked too much. The Maya Kitchen suggests transforming leftover rice into a sumptuous dish by adding some bits of chorizo and spices.
The Spanish Chorizo Fried Rice is perfect for breakfast. To prepare: sauté onions, garlic, and chorizo cubes; throw in vegetables such as corn and bell pepper; and let them cook for another two to three minutes.
Got leftover roast or fried chicken? Jazzed it up with green vegetables and oil-based dressing for a quick and healthy meal.
To create the Leftover Chicken Fruit and Green Salad, start by arranging salad greens in a dish bowl; toss in sliced chicken slices, choice of fruits (e.g. orange or apples), and walnuts and cheese; finally, drizzle any oil-based dressing of choice.
Adobo is great even the day after, but to spice it up the next day, The Maya Kitchen recommends transforming it into Loaded Adobo Flakes Quesadillas.
This recipe is a quick and easy addition to every household’s weekly menu. Arrange the adobo flakes on top of a quesadilla and garnish it generously with onion, cucumber slices, salsa, and grated cheese. It’s great to eat at home or at school or work.
